Sarlat: Foie Gras

This sculpture marks the "Square of the Geese" in the medieval village of Sarlat.
Geese are seious business here, and have been since the Middle Ages. 

Foie Gras, the  tasty spread made from geese (and ducks or a mix of the two) is everywhere, as you can see by the collection of signs above each merchant's door. 

I am sure the PITA people have a fit with the harvesting of the forced-fed geese's livers..but, the French take great satisfaction in this ancient process.
