How could I forget the "Queen of the Market" in Nice...Therese. The above photo is her famous socca, Nice's chickpea crepe specialty.
She hovers over the black-barrel fire with the paella-like pan on top and brings her flamboyant personality to the market as she cooks and serves hot wads of the socca. We had just eaten breakfast, so were not tempted..but, I remain curious,
